Lamb Kofta Kebabs

  • 250g Lamb Mince
  • 1 tsp Garam Masala
  • Pinch of Salt and Pepper
  • 1 tbsp Olive Oil
  • 25g Pistachios
  • A Few Sprigs of Fresh Thyme
  • 1 tbsp Honey
  • 1/2 Cup of Couscous
  • In a bowl, mix mince with salt, pepper and the garam masala
  • Divide into 4 then roll into saussage shapes and fry in oil until brown all over
  • Cook the couscous with a little butter and 1 cup of boiling water for approx 5 minutes
  • Crush the pistachios with a pestle and mortar and add to the kebabs with the honey and thyme leaves, turn off the heat and serve

Banana Sticky Toffee Pudding

Ingredients

  • 150g Self raising flour
  • 150g Brown Sugar
  • 150g Butter
  • 2 Eggs
  • 1tsp Vanilla extract
  • 1/2tsp Bicarbonate of Soda
  • Pinch of salt
  • 30g Dates, chooped
  • 2 Bananas, mashed
  • Soak dates in boiling water and set aside for 5 minutes
  • Cream the butter and sugar together
  • Slowly beat the eggs into the mixture
  • Sift in flour, salt, vanilla extract and bicarbonate
  • Fold in dates and bananas
  • Pour the mixture into a tin lied with greaseproof paper and cook for approximately 40 minutes at 180 degrees C.
