Lamb Kofta Kebabs
- 250g Lamb Mince
- 1 tsp Garam Masala
- Pinch of Salt and Pepper
- 1 tbsp Olive Oil
- 25g Pistachios
- A Few Sprigs of Fresh Thyme
- 1 tbsp Honey
- 1/2 Cup of Couscous
- In a bowl, mix mince with salt, pepper and the garam masala
- Divide into 4 then roll into saussage shapes and fry in oil until brown all over
- Cook the couscous with a little butter and 1 cup of boiling water for approx 5 minutes
- Crush the pistachios with a pestle and mortar and add to the kebabs with the honey and thyme leaves, turn off the heat and serve
Banana Sticky Toffee Pudding
Ingredients
- 150g Self raising flour
- 150g Brown Sugar
- 150g Butter
- 2 Eggs
- 1tsp Vanilla extract
- 1/2tsp Bicarbonate of Soda
- Pinch of salt
- 30g Dates, chooped
- 2 Bananas, mashed
- Soak dates in boiling water and set aside for 5 minutes
- Cream the butter and sugar together
- Slowly beat the eggs into the mixture
- Sift in flour, salt, vanilla extract and bicarbonate
- Fold in dates and bananas
- Pour the mixture into a tin lied with greaseproof paper and cook for approximately 40 minutes at 180 degrees C.
